7 Easy Recipes to Bake With Fewer Ingredients

Many of us are using baking as a therapy to cope with the stresses of COVID-19 and our time in quarantine. Unfortunately, if you walk down the baking supplies aisle these days, you'll see a lot of empty shelves. After several grocery trips I still haven't found bread yeast, and it's hard to stock up on eggs. So here are some recipes that use fewer ingredients or don't require ingredients that are often out of stock.




Situation 1: No Eggs

Water Cake is an Italian cake that you don't need any eggs or dairies! It's very simple, but you can also add different flavors.

Flavor Options:

Kirbie mentions that you can add:

  • "ground cinnamon to make a cinnamon flavored cake
  • espresso powder for a coffee-flavored cake
  • lemon or orange zest for a citrus cake" (Kirbie)

Ingredients Needed:

  • all purpose flour
  • baking powder
  • granulated sugar
  • water
  • vegetable, canola, or olive oil
  • vanilla
  • optional flavor of your choice

Crazy Cake

So-called Depression Cake and Whacky Cake. This cake was commonly baked during the Great Depression since eggs, butter, and milk were expensive or hard to get. It's the perfect time to re-create this cake as we experience this new era revolving around the coronavirus.

  • cake flour
  • granulated sugar
  • baking cocoa
  • banking soda
  • salt
  • vanilla extract
  • white vinegar
  • vegetable oil
  • water

Situation 2: No Flour

No flour, gluten-free, rich and intense chocolate mousse cake! Nigella Lawson recommends to top it off with raspberries, cream, or sour cream. It seems like a great cake to indulge in at a time like this.

Ingredients Needed:

  • bittersweet chocolate
  • unsalted butter
  • large eggs
  • sugar
  • brandy
  • confectioners' sugar (optional)

Peanut Butter Cookies

You only need four ingredients! Gluten-free, perfect for hungry kids. (And for adults too, of course!) I love the idea of adding some extra protein to my diet with peanut butter snacks.

Ingredients Needed:

  • peanut butter 
  • *golden caster sugar
  • fine table salt
  • 1 egg

*It uses an ingredient called golden caster sugar, which I was unfamiliar with, so I did some research. According to Nigella Lawson, it's a "fine granulated sugar that is made from unrefined sugar cane or beets." He also mentions that it's popular in the UK, but in the US you can use regular white caster/superfine sugar as a substitute. Brown sugar might have an adverse effect.  




Situation 3: No Milk

French Apple Cake 4 Ingredients

This is another recipe by Kirbie Cravings, a French apple cake that only uses four ingredients! It seems like an excellent way to sneak in some nutrition from apples into your diet.

  • large eggs
  • light brown sugar
  • all purpose flour

Situation 4: No Yeast

Olive Oil Bread

You can make this easy and quick old-fashioned bread in a skillet in just 15 minutes! Perfect for when you want bread right now and have no time to prove or bake.  Liz also mentions that it's a great way to create single-serving bread instead of having to make a whole loaf. You can also add rosemary and parsley for extra flavor.

Easy Brazilian Cheese Bread

Delicious Brazilian cheese bread is made with Tapioca flour and also gluten-free! Elise Bauer describes the bread as "a chewy cheese puff" (Bauer).
